TWD #32 Blueberry Upside-Downer
I love simple cakes. This cake was one of those super simple, whip up in ten minutes kind of cakes. It had about 10 ingredients that were all something you would have on hand. This is one of those “I need something quick to whip up for dessert because company is coming” kind of cakes. It was moist and not too heavy. Everyone would love this simple little cake.
This was picked by Sabrina of Superfluous. Be sure to take a peek at her blog for the recipe and to see what she did with it. The actual recipe called for cranberries instead of blueberries. Since I had blueberries in the freezer and I did not want to go with the store, we had a blueberry cake.
The top of the cake was chopped pecans that was sprinkled over melted butter mixed with sugar. Then the frozen blueberries were popped on top of that. Finally the cake batter was spread on top and it went in the oven.
The cake was light and moist and had the perfect amount of cinnamon in it. Combined with the buttery, crunchy fruit on top, the cake was the perfect treat to wrap up any meal. It would even be good in the morning with a cup of coffee and the today show in the background.
