TWD #41 Toasted Almond Scones

Why do scones make me want a cup of tea? Scones always seemed like one of those things that was out of reach for me to make. Wrong. These were the easiest thing to whip up. All I needed was a bowl and a fork.

The one thing this recipe is not lacking is almonds. It had ground almonds, chopped almonds, almond extract and a sprinkling of almonds on top. With all those almonds, I decided to brighten these up with some lemon zest. I used just one lemon and it went perfectly with all of the almond flavor.

The ground alomonds were mixed with the flour and butter until it was pebbled. Then came the the good stuff—heavy cream! Everything is better with cream and butter!! The sticky dough was mixed with the chopped almonds and then kneaded a few times in the bowl. I turned it out onto my board and shaped it and cut into six pieces. I sprinkled coarse sugar and more almonds on some and popped them in the oven to bake away.

These were super easy to make and tasted even better. Next time you feel like you just gotta have a scone, whip some of these up to have with your tea or coffee. Enjoy!! Smile
