Chocolate Chip Cookie Sandwiches
I had to take in goodies for our treat day at work. Naturally I jumped at the opportunity to do some baking! I love to bake and will gladly spend all day in the kitchen baking away. The only problem with that is that we want to eat all of the goodies. Not one or two, but ALL of them. Actually having a place to take my baked goods is great for two reasons—I get to bake, and we won’t be able to eat them all!!
I had a ton of cookie frosting leftover from icing my butter cookies. Instead of throwing all of the frosting away, I decided to use it for cookie sandwiches. Since it is close to Halloween, I colored the frosting orange to give them a festive look. I had never used these two things together—I usually don’t do much to change recipes. This time I figured I would get all wild and crazy with my cookies—go me!
My chocolate chip cookies are famous—everyone loves them. The best man at our wedding even made me promise to always make him chocolate chip cookies in his toast to us! My butter cookie frosting is always yummy too. The two together—genius! I know what you are thinking—too sweet. But they actually had the perfect amount of sweet. I used all semi-sweet chips in the cookies, so the sweetness from the frosting only added to the cookies.
My cookies are always an awesome combination of crunchy on the edge and soft in the middle. The trick is to take them out just when they are getting the tiniest bit brown on the bottom. Even if you think that the middles are not done, take them out. They will keep cooking on the sheet even after you take them out of the oven.
Normally I use a spoon to drop them on the sheet, but this time I wanted to make sure that they were all the same size. I finally got to break out my new cookies scoop. LOVE IT!! I had always been one of those people that thought I didn’t need the scoop, but now I’m a believer! I am running right out today to get the smaller version, so that I can make perfect little tiny cookies!
I would give the recipes for my cookies, but I just can’t part with it yet. Use whatever cookie recipe is your favorite and these will be delish! Enjoy!!
Favorite Chocolate Chip cookie recipe :)
1stick of butter at room temp.
3 1/2-4 cups of powdered sugar, sifted
1 tsp. vanilla
1/3 cup cold milk
Whip butter, sugar and vanilla until light and fluffy. Add milk until you get the spreading consistency you want. Use colored gels to get your desired color.
Once the cookies are cooled, use a large round tip to pipe frosting on the bottom of a cookie. Pipe a large dollop in the center of the cookie. Don’t take the frosting to the edge, or it will squish out when you put the cookies together. Take the bottom of another cookie of the same size and press them together to make the sandwich. Lay the cookies flat until the frosting has dried. Keep covered until ready to serve.
