TWD #30 Lots of Ways Banana Cake
Watch out—I am finally posting a TWD pick on the right day and on a Tuesday!! I don’t even know what to do with myself!
If you are thinking about making some banana cake or bread, you should so make this one! While I will say that this one is more like a banana bread than cake, it is still delicious!

Lately, all of the Dorie recipes have been super easy and this is no exception. This one had very few steps and took hardly any time to make. The bananas were mashed. Sugar and butter creamed together. Easy.
You have this super smooth batter once it is mixed. Until ya add the bananas and then you have a curdled nasty mix. Good thing that Dorie warned me about this or that could have been the end of the banana cake. Id did even out when the flour and milk were added. 🙂
Before baking, I stirred in some toasted coconut. The recipe was super flexible. If a had something, you could add it. If not, Dorie said that the recipe would be fine. I love things like that. Sometimes it is nice to not feel bad that you don’t have the nice chocolate or the right flavors. It called for it to be baked in a cake pan. I opted for the cupcakes. They baked up perfectly after about 17 minutes.
I loved that you could taste the coconut and the nutmeg in the cupcakes. While they were not quite as good as mama’s banana bread, it was still one for the recipe box. These would be good plain for breakfast or topped with a swirl of cream cheese frosting for dessert! Enjoy!!
