TWD #33 Coffee Break Muffins
The name of these muffins is kind of misleading. You hear coffee in the name and think it will be something with a very distinct flavor. Mine did not turn out that way. They were a good, easy to make muffin, just not very flavorful.
I whipped these up in about five minutes on Sunday morning. They were super easy to mix—no mixer required, just a whisk. For that reason, I will totally try these again.

Like I said, it was super easy to make these. Mix some flour and sugar. Add in some eggs and coffee and you have muffins. 🙂 The batter was fluffy and stayed the same when they were baked up. I did like these muffins, they just need some more flavor.
There were two reasons why I think the muffins were not that great. It called for strong coffee and espresso powder. I used the last of our crappy coffee that we both hate. I also used a cappuccino instant coffee instead of the espresso powder. I think that, had I used the right stuff it would have tasted better. We also thought they could use some sort of streusel topping, or some crunch to them. The next time I make these muffins, I will add some extra stuff to make these a little more tasty. Enjoy!!
