TWD #33 Coffee Break Muffins

The name of these muffins is kind of misleading. You hear coffee in the name and think it will be something with a very distinct flavor. Mine did not turn out that way. They were a good, easy to make muffin, just not very flavorful.

I whipped these up in about five minutes on Sunday morning. They were super easy to mix—no mixer required, just a whisk. For that reason, I will totally try these again.

DSC_0310Like I said, it was super easy to make these. Mix some flour and sugar. Add in some eggs and coffee and you have muffins. 🙂 The batter was fluffy and stayed the same when they were baked up.  I did like these muffins, they just need some more flavor.

There were two reasons why I think the muffins were not that great. It called for strong coffee and espresso powder. I used the last of our crappy coffee that we both hate. I also used a cappuccino instant coffee instead of the espresso powder. I think that, had I used the right stuff it would have tasted better. We also thought they could use some sort of streusel topping, or some crunch to them. The next time I make these muffins, I will add some extra stuff to make these a little more tasty. Enjoy!!

    ooo i covet your silicone muffin pan. i have the single cups but those are a paiiiin when it comes time to clean every. single. one.

    maybe try using a milder flavored coffee in these. i went with hazelnut vanilla and it was awesome!! either way, they look great!

    Sorry to hear you were underwhelmed by the flavor – your assessment of why the flavor was lacking is probably spot on. They do look very nice though!

    They look good. You could always add some chocolate, too. That was pretty good!

    They look so good..sorry the flavor was not the best. I used some chai tea in mine and loved them!!
