TWD #42 Chocolate Pots de Creme
Just saying the names of these makes me want to eat croissants and wear a beret. And you have to say the name of these with a phony French accent and one lip curled up.

When a recipe calls for tempering eggs and a water bath, you know it’s gonna be a good time. Usually that kind of thing scares me…I am so afraid of having a pudding cup full of scrambled eggs. But, like always, Dorie’s recipes are perfection. That whole professional pastry chef was the right path for her, huh?
The recipe was actually super simple to make. I was nervous, but it was easy and came together fairly quickly. The chocolate was melted with cream. Sugar and yolks were whisked until foamy and pale. Then the cream and milk mixture was added to the eggs and sugar. The cream was added to the chocolate and there ya have it. Before going into the ramekins, the foam was scooped off the top and they were all ready for baking.
They baked in a water bath until they were just a little bit jiggly and had set on top. I let them cool in the bath and then on the rack until room temperature. I put them in the fridge to chill until dessert time. These really were delicious. I made some fresh whipped cream to go on top and we had a lovey chocolate treat after dinner. I can’t wait to make these again! Enjoy!!
