Cream Cheese Roll-ups
I don’t think that you can ever go wrong with cream cheese, sugar and bread. And it could not be easier. Who knew that white bread could be so tasty??
This is another recipe that I saw on pinterest. The pin was just a picture of the finished project and the how to—no link up to a blog or where it came from. Wanting something sweet and yummy, but not wanting just another store bought danish, I decided to whip these up this morning. Wow. So simple and tasty…this is a winner.
Before you get started, have all of your ingredients ready. You don’t want the bread to dry out while you are getting everything together. You need some melted better, a cinnamon sugar mix, and some cream cheese. Cut all of the crusts off of the bread and then it is ready for the goodness.
Flatten the pieces of bread with your hands—just give them a good smoosh to flatten them down. Spread a thin layer of cream cheese on the top of the bread. Make sure the cream cheese goes all the way to the edges so that the bread will stick when rolled up. When they are all spread with cream cheese, roll up the bread into little logs. Dip them in butter, but don’t soak it. I lightly put one side in and then spread the butter around with my hands. Do make sure to get the ends of the bread with butter. When they are all buttered, they go in the sugar mix. Roll them around to make sure all parts are covered.
When they are all dipped and rolled, line them up on a cookie sheet. I had mine lined with silpat, but parchment would be just fine. Put them in a preheated oven for about 20 minutes. When they are crunchy, golden brown and you can see the cream cheese all bubbly then they are ready.
You never know how some random thing you find online will turn out. Hub’s and I were both pleasantly surprised about these. They are crunchy and sweet and light and super tasty. They are also crazy easy to make. I will definitely be adding these to the recipe rotation. They would be great for a brunch party or just for a weekend breakfast at home. Enjoy!!
Cream Cheese Roll-Ups
- 20 pieces of white bread
- 2-3 ounces of cream cheese at room temp.
- 2-3 ounces mascarpone cheese at room temp.
- 1/2 cup granulated sugar
- 1/4 cup powdered sugar
- 1-2 tablespoons cinnamon
- 1 stick of butter, melted
Preheat oven to 350 degrees. Cut the crusts off of the bread. Mix the cream and mascarpone cheeses together in a bowl. Spread each piece of bread with a thin layer of the cheese mix. Roll up the bread and press the edges together.
Dip each piece lightly in the melted butter. Don’t soak the bread, but make sure each piece is covered with butter. Roll the buttered bread in the cinnamon sugar mix.
Place each piece of bread seam side down on a line baking sheet. Bake for about 20 minutes until they are crunchy and golden brown. Eat and enjoy!
